🌮 Healthy Chicken Tacos

🥦 Ingredients:

For the Chicken:

  • 1 lb boneless, skinless chicken breasts (sliced thin or diced)

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/4 tsp black pepper

  • 1/4 tsp salt

  • Juice of 1 lime

For the Toppings:

  • 1 cup shredded red cabbage or lettuce

  • 1/2 cup diced tomatoes or cherry tomatoes (halved)

  • 1/4 cup diced red onion

  • 1 avocado, sliced or mashed

  • 1/4 cup chopped fresh cilantro

  • 1/2 cup plain Greek yogurt or low-fat sour cream (as a healthier topping)

  • Optional: lime wedges for serving

For the Base:

  • 8 small whole wheat or corn tortillas (warmed)


🍳 Directions:

  1. Prep the Chicken:
    In a bowl, toss the sliced chicken with olive oil, chili powder, paprika, cumin, garlic powder, pepper, salt, and lime juice. Let marinate for 10 minutes (or longer if time allows).

  2. Cook the Chicken:
    Heat a skillet over medium-high heat. Cook the marinated chicken for 6–8 minutes, stirring occasionally, until fully cooked and lightly browned.

  3. Prepare the Toppings:
    While the chicken cooks, chop your vegetables and prepare your toppings (mash avocado, slice lime, etc.).

  4. Warm the Tortillas:
    Warm tortillas in a dry skillet for 30 seconds on each side or microwave them wrapped in a damp paper towel for about 20 seconds.

  5. Assemble the Tacos:
    Place the cooked chicken onto each tortilla. Top with cabbage, tomatoes, onion, avocado, Greek yogurt, and cilantro.

  6. Serve & Enjoy:
    Squeeze a bit of lime juice over each taco before serving for extra flavor!
